FRESNO SAMBAL

NO. 1

This versatile, hot chili relish is adapted from the classic Southeast Asian preparation. A colorful way to add toothsome acid and heat to any prepared dish or appetizer board, this condiment may also be used as a base for vinaigrettes and sauces. Our fresnos come from the Thao Family Farm, founded by the Thao family in 1979 who emigrated to Fresno, California. Now a thriving example of zero waste, sustainable farming in California’s Central Valley, the Thao family has been producing prized ingredients for California chefs for decades. Our sambal is a celebration of the work of those farmers and of the summer season. It is moderately piquant.


GREEN CHILI ZHUG

NO. 2

Pronounced “zchoog,” this vibrant chili relish is our adaptation from the traditional Yemenite hot sauce. Floral and citrus-forward, this sauce is our favorite way to dress up grains, legumes, roast meat and seafood dishes, and pairs especially well with ceviches. For the snackers amongst us, enliven any sandwich, flatbread or appetizer board with this elegant umami burst. The serranos, jalapeños and poblanos are California Certified Organic, from Flora Bella Farms in Three Rivers, California, a market favorite and staple since 1991. This condiment is medium piquant.


CALI CALABRIAN

NO. 3

Salty, smoky and fruity, with a definitive spicy bite, these chili peppers have been pickled and preserved in olive oil. Traditionally grown in the Calabrian region, our peppers come from the celebrated Weiser Family Farms in Tehachapi, California who employ methods of dry farming, cover cropping and crop rotation to enrich the soil even as it gives. As the Calabrian chilis boast regional, Italian roots, the natural pairing for this condiment is any Mediterranean-style dish. Garnish pizzas, cured meats and roasts or use as the base for sauces and gastriques.


LITTLE BEAKS

NO. 4

The Biquino pepper varietal hail from the Brazilian state of Minas Gerais and are named for their adorable shape! Nicknamed “little kiss” or “little beaks” these mild peppers are sweet and fruity with a habanero flavor. Our peppers come from the celebrated Weiser Family Farms in Tehachapi, California who employ methods of dry farming, cover cropping and crop rotation to enrich the soil even as it gives. These little cuties work well as a stand alone snack or appetizer.


CHERRY PEPPERS

NO. 5

Cherry Peppers are the most familiar and user friendly of all our peppers and are mild, sweet and succulent. These guys are most famous for their roll in the beloved pimento cheese dip and as a stuffing for cocktail olives. Our peppers come from the celebrated Weiser Family Farms in Tehachapi, California who employ methods of dry farming, cover cropping and crop rotation to enrich the soil even as it gives. These peppers bring color pop to any table and are a great snacking fruit.
